Baked Beans

- Instant Pot

1Mix together molasses , maple syrup , water , and soy sauce .molasses: 2 tbsp, maple syrup: 2 tbsp, water: 7 oz, soy sauce: 1/2 tbsp

2Saute bacon strips in Instant Pot until lightly browned, ⏱️ 4 minutes .bacon strips: 3 (diced)

3Add onion and saute for about ⏱️ 2 minutes .onion: 1 (medium, diced)

4Add garlic , salt , and ground black pepper . Saute for another ⏱️ 1 minute .garlic: 1.5 cloves, salt, ground black pepper

5Add about liquid mixture to Instant Pot and deglaze.liquid mixture: 4 tbsp

6Add navy beans , salt to taste, and bay leaf to Instant Pot. Make sure beans are just covered with liquid. Add extra water if needed.navy beans: 8 oz (soaked), salt, bay leaf: 1

7Pressure cook on high for ⏱️ 20 minutes . Allow pressure to naturally release.

8Add mustard and saute beans until thickened.mustard: 1 tsp

9Stir in apple cider vinegar .apple cider vinegar: 1/2 tsp

Half batch, suitable for side dish. Might add additional molasses. Used stone ground garlic mustard.
