Baked Beans

  • Instant Pot

    Mix together molasses , maple syrup , water , and soy sauce .
    molasses: 2 tbsp, maple syrup: 2 tbsp, water: 7 oz, soy sauce: 1/2 tbsp

    Saute bacon strips in Instant Pot until lightly browned, ⏱️ 4 minutes .
    bacon strips: 3 (diced)

    Add onion and saute for about ⏱️ 2 minutes .
    onion: 1 (medium, diced)

    Add garlic , salt , and ground black pepper . Saute for another ⏱️ 1 minute .
    garlic: 1.5 cloves, salt, ground black pepper

    Add about liquid mixture to Instant Pot and deglaze.
    liquid mixture: 4 tbsp

    Add navy beans , salt to taste, and bay leaf to Instant Pot. Make sure beans are just covered with liquid. Add extra water if needed.

    Pressure cook on high for ⏱️ 20 minutes . Allow pressure to naturally release.

    Add mustard and saute beans until thickened.

    Stir in apple cider vinegar .

    Half batch, suitable for side dish. Might add additional molasses. Used stone ground garlic mustard.
